Banana Double Chocolate Muffins

Thought I would share an oldie but goodie today! These are rich and moist and freeze beautifully!

Banana Double Chocolate Muffins

Cook Time: 25-27 min
Ingredients (12 muffins)
  • 2 cups flour (I used Robin Hood Tastes like white Nutri blend)
  • 2 Tsp baking powder
  • 2 Tsp baking soda
  • 2 Tsp pure vanilla extract
  • 1/2 Tsp salt
  • 1/4 Tsp cinnamon
  • 3 Tbsp unsweetened cocoa powder
  • 4 large, very ripe banana's, mashed
  • 1/2 cup unsweetened almond milk
  • 1/2 cup of brown sugar
  • 1/4 cup coconut oil, melted
  • 1/2 cup mini vegan chocolate chips
Preheat oven to 350F
In a large bowl whisk flour, baking powder, baking soda, salt, cocoa powder, & cinnamon, until blended.
In another bowl mix mashed banana's,vanilla,almond milk, coconut oil, and sugar. Stir until well combined.
Slowly add the wet mixture to the dry, folding in until just mixed. Add chocolate chips. Stir until just mixed.
Pour mixture into foil lined muffin liners in a muffin tin, or a well greased muffin tin.
Fill nearly to the top (3/4).
Bake for 25-27 min or until a toothpick inserted through the center top comes out clean.
